Collin + Becca, our best buds + former best man/maid of honor, flew down from our hometown in Illinois to spend the weekend with us! Greg has known Collin since kindergarten + we met Becca early on in college. They’re the kind of lifelong friends who you pick right back up to where you left off + feel totally comfortable being yourself with.
We scooped ’em up for the airport + after unwinding a bit, we head to downtown Greenville for dinner + exploring. Gringo’s was on the list for dinner. I’m kicking myself now for not taking any pictures of our food. Oops! I’m still working on it!
They have lots of interesting taco options such as chicken + waffle [so good!], blood orange chicken, bacon cheeseburger, philly cheesesteak, etc. Props to our server for keeping the chips flowing!
Next, we headed to Falls Park. It’s a really beautiful area with trails + picturesque landscaping surrounding a waterfall in the middle of downtown. We looked out at the waterfall from the Liberty Bridge. Still not totally into being able to feel the bridge move in the wind, but whatever!
After walking around for a bit and making room for dessert, Spill the Beans was up next! It’s perfect merging of a coffee + ice cream shop. All you could ever want. You pick a base + toppings, and they blend it up! I went for vanilla ice cream with fresh peanut butter + graham crackers mixed in. Phenomenal combo!
We woke up, walked the dog, packed the car + headed off to Charleston! The 3 hour drive is so much more bearable with a full car + lots to catch up on. We made it without hitting any Labor Day traffic so that alone was a success.
Sullivan’s Island beach is my personal favorite over Folly Beach. I find it to be much quieter + a bit cleaner. Parking was a bit of a challenge, but we ended up in a less busy section because of that, so another win for the day! To save on time + money, we packed some sandwiches + snacks to enjoy a picnic on the beach.
Not pictured is the additional snackage including: chocolate chip cookies, pretzels, white cheddar popcorn, + veggie straws.
We lathered up on sunscreen, waited the 15 minutes per Becca so it would actually dry + protect us, and hit the water! We spent a few hours here, mostly lounging under the umbrella. Especially for my pale, redheaded self. The sun is never kind to me.
Once we got our fill of the sand, we packed up to wanter downtown Charleston. We were already pretty wiped out from all that beach lounging!
We stopped for an early dinner at Poogan’s Smokehouse. Once again, I almost forgot to snap a picture which is why we’ve already dug into our meals here. Everything was delicious! I got a salad that was topped with the best piece of fried chicken ever. I snagged one of their house chips off Collin’s tray, too + was mighty impressed!
A final stroll through the beautiful streets of Charleston to show our buds a couple iconic views including The Battery + Rainbow Road.
And before we made the trek back to Greenville, we had to get us some gelato! This was the first time I had tried pistachio and oh man. I’ve been missing out! This was from Belgian Gelato — definitely would recommend!
After 2 packed days of being outside in the heat, we decide to take it way easy on Monday. I got up to take Riku on a quick walk before hitting the gym to get some fun movement in — woke me up and got me ready for a day of chilling!
After a slow breakfast, this ↑ is what our morning consisted of. This formation of us all on the couches was pretty typical during college. We love to be together yet doing our own things aka engrossed in some form of technology. We also helped them catch up on BIP [Bachelor in Paradise]. Such a ridiculous show!
Chik-Fil-A may not be open on Sundays, but they sure were for labor day! Hit the spot. I got the chicken tenders, waffles fries, + a side salad. Washed down with a half lemonade / half iced tea.
The one food Becca requested we have was my chocolate chip cookies. I always use this recipe from Sally’s Baking Addiction, and let me tell you — they are never NOT a huge hit. This weekend was fueled by chocolate chip cookies + ice cream. And nobody complained about that! 😉
We decided to eat in tonight so I whipped up a one-pot pasta, garlic bread, + roasted broccoli. It was whole wheat pasta with garlic, onions, canned tomatoes, fresh basil, + grilled chicken. One of Greg’s favs — despite it not always looking the most beautiful in photos!
We capped off our Labor Day with board games! One of our favorites is Pandemic [affiliate] — it’s a collaborative game so no one can be a sore loser. 😉
We didn’t do too much with this final half day they spent with us except research vacation destinations for a future trip + brunch.
Eggs Up Grill it was! Love me some all-day breakfast / diner food. Everything was phenomenal! As usual, I tried bites of everyone’s meals and all were great. I was impressed with their grits, too, since sometimes those can be hit or miss.
Then our best buds hopped on a plane headed back to Illinois. Until we meet again! [Shen-Masters Vacation 2018 in the works!]
